“RASA” chocolates – the story
“Rasa”
in telugu means juice or juicy or anything (semi) liquid and flowy. Yes, my
mentor is telugu and hence the (naamkaran) “RASA”! Sounds intriguing. So, Rasa
chocolates are prepared with outer shell of either dark or white compound
chocolate and the “juice” inside can range from a cream filling to real fruit
filling or even small pieces of real fruits, as the case may be. Or, it could
be a combination of cream filling with fruit or nut pieces mixed. To make it as
interesting and “surprising” (as some of my clients quote) as possible. Rasa
chocolates are prepared with passion, perfection and precision. A lot goes into
the manufacturing of Rasa than does into preparing simple or “nutty”
chocolates. Rasa can be in either moulded or non-moulded form depending on
customer requirement or mood of the manufacturer.
“Filling”
The fillings vary from cream base to
real fruit base as mentioned. Choco-cream, choco-orange, coffee, coffee-crunch,
almond-crunch, cashew-crunch, blueberry, orange, mocha-nuts, strawberry,
neutral cream, coffee-cream, plain ganache, ganache nuts, coconut-cream, caramel,
caramel nuts, ganache-berry, etc... As much as one if willing to experiment! But
yes, these are associated with adjectives like “mouth watering”, “yummy”,
“tempting”, “delicious”, “irresistible” and many more flattering describable
words! A lot more can be experimented with these fillings’ stuff, which is the
most happening thing in my kitchen. These “experiments” are totally crazy, but
is driven by passion!
Both the shell (compound chocolate)
and the filling stuff is derived from vegetarian sources. The fillings may vary
in flavour, mouth feel, texture, taste perception, aroma etc., but have a
common base ingredient and have been specially developed for use in chocolates.
This makes for the surprise element when enjoying these “Dil Khush” (happy
heart) chocolates. The ingredient and moisture balance along with precision in
manufacturing, takes care of the finished product such that it complements that
of the compound chocolate coating.
Care
Care
should be taken during hot & humid weather – store away in refrigerator,
dry and cool conditions. Keep pests away. Keep away from any food that carries
strong or stale odours. Rasa chocolate are indeed best enjoyed at room
temperatures.
Some
of the “surprise elements” of these chocolates could melt in your mouth
instantly while some will stay put for a while, letting you enjoy your bite. So,
one need not make any effort to “eat” it, simply bite it, sit back and enjoy.
